While oil helps to lower the friction between the internal parts and offer some cooling, Coolant is a dedicated cooling agent that actually keeps the engine itself cool and its overall temperature under control and that is why we call it the engine coolant. Because at the same time that i developed a coolant leak my oil pressure warning light starting coming on more frequently. My theory is that as the oil cooler is liquid cooled, low coolant level doesn't cool the oil sufficiently and as the oil temp goes up, viscosity goes down resulting in lower oil pressure and tripping the sensor.
